Jam/Almonds Cupcakes:

Hello my friends,

Hope you are doing well!!

If you are like me and you like Cupcakes than this recipe is for you. SOO delicious and fun to make. The ingredients are easy to find; so you have No excuse. OK let’s go ahead and get started.

You will need:

4 eggs

The juice of 1 lemon (Big spoon)

1 ts of lemon rind

1 baking powder

¾ of a cup of 120ml of oil

100g of sugar

Pinch of salt

200g of flour

2 big s of apricot jam

For decoration:

Some slivered almonds.

20160711_124340-Of course preheat your oven to 180°C.

-Put some oil/butter on your cupcakes paper cases.

 

Method:

In a blender, put the eggs, sugar, oil (you can add some vanilla extract) and mix everything.After that pour the mixture into a bowl.

Add the lemon rind, the jam, salt and the baking powder, hand mix again.

 

Add the flour (I suggest that you sift it) little by little to make it easier to blend and mix it very well.

Put your mixture on the cupcakes paper cases until its full

And finally, decorate the top by sprinkling the slivered almonds.

Put it in the oven and let it cook until its gold.     TADAA                 ENJOY 🙂
