Coral Lentils and Veggies Soup #mealprep

Starting a new year in College or work means getting back to a routine. As I mentioned in my previous posts, a big part of my routine has been meal prepping.

There is nothing better than a warm bowl of soup for a cozy dinner in the cold winter/ Fall days. So it is only appropriate to share with you the recipe of my yummy, quick, and easy Coral Lentils and Veggies soup.

๐Ÿ You will need:

1 chopped Onion.

4 Carrots cut into round slices.

4 grated Tomatoes.

A bowl of Coral lentils (The more you have, the thicker the consistency of the soup will be)

A piece of Ginger.

Some branches of parsley.

Salt and pepper.

2 Ts of olive oil.


๐Ÿ Method:

1- In a cooking pot, put the olive oil and all your vegetables; put the chopped onion, the 4 carrots, and the tomatoes. Add salt and pepper, and parsley. Fill about half of the cooking pot with water. Put enough water for the carrots to fully cook, but also make sure you don’t over fill it so that you don’t get a watery soup. Obviously the lentils will absorb water, so take that into consideration.

2- When the carrots are almost cooked, add your coral lentils. Let it simmer enough for the lentils to cook. It will soften and absorb some water. If you need more water, you can add it, depending on the consistency of your soup.

3- When its cooked, use a hand blender to blend everything together. Finally, add your piece of ginger, and let it cook for few more minutes.
